10-Minute St. Lucian Meal: Grilled Fish with Green Fig Salad

Meal: Grilled Fish with Green Fig Salad


Ingredients (Makes 3-4 servings)


  • 2 fillets of fresh fish (snapper or mahi-mahi)

  • 1 tbsp lime juice

  • 1 tbsp green seasoning (blend of thyme, scallions, garlic, and parsley)

  • ½ tsp salt

  • ½ tsp black pepper

  • 1 tbsp olive oil

  • 4 green figs (green bananas), boiled and sliced

  • ½ cup shredded cabbage

  • ½ small onion, finely chopped

  • ½ sweet pepper, diced

  • ½ cup cherry tomatoes, halved

  • 1 tbsp apple cider vinegar

  • 1 tbsp olive oil


Steps:


  1. Season the Fish – Rub fish fillets with lime juice, green seasoning, salt, and pepper.

  2. Grill the Fish – Heat a pan with olive oil and cook fillets for 4-5 minutes per side until golden and cooked through.

  3. Prepare Green Fig Salad – Mix boiled green fig slices, cabbage, onions, sweet peppers, and cherry tomatoes in a bowl.

  4. Dress the Salad – Drizzle with olive oil and apple cider vinegar, then toss well.

  5. Assemble & Serve – Plate the grilled fish with a portion of green fig salad.

  6. Store & Reheat – Keep portions in meal prep containers for an easy work lunch.
