Ingredients (Makes 3-4 servings)
2 fillets of fresh fish (snapper or mahi-mahi)
1 tbsp lime juice
1 tbsp green seasoning (blend of thyme, scallions, garlic, and parsley)
½ tsp salt
½ tsp black pepper
1 tbsp olive oil
4 green figs (green bananas), boiled and sliced
½ cup shredded cabbage
½ small onion, finely chopped
½ sweet pepper, diced
½ cup cherry tomatoes, halved
1 tbsp apple cider vinegar
1 tbsp olive oil
Steps:
Season the Fish – Rub fish fillets with lime juice, green seasoning, salt, and pepper.
Grill the Fish – Heat a pan with olive oil and cook fillets for 4-5 minutes per side until golden and cooked through.
Prepare Green Fig Salad – Mix boiled green fig slices, cabbage, onions, sweet peppers, and cherry tomatoes in a bowl.
Dress the Salad – Drizzle with olive oil and apple cider vinegar, then toss well.
Assemble & Serve – Plate the grilled fish with a portion of green fig salad.
Store & Reheat – Keep portions in meal prep containers for an easy work lunch.
